2 chicken portions, i used 2 quarters
4 small potatoes cut into quarters

2 carrots, cut into chunks.

butternut squash  approx a quarter  – cut into chunks.

1 courgettes thickly sliced
1/2 pack of cherry tomatoes cut into halves
1 onion sliced
herbs tsp of each – parsley, basil, thyme,  or whatever you’ve got
3 garlic cloves finely chopped
1 tsp chilli flakes

1 tbsp lemon juice

preheat oven gas 6/ 200c  – i used my halogen oven and cooked at 225 for 45 mins. i parboiled the potatoes,squash and carrots

layer the base of a roasting dish with the veg. top with chicken then sprinkle on chilli, garlic, herbs, and lemon. bake until browned and cooked through
