1 onion
450g /1 lb carrots
1 garlic clove
2 pints veg stock
Large bunch fresh coriander
Salt and pepper

1- Chop onions , garlic and carrots.
2 – Fry light a pan, add onion and garlic, cook for 2 mins
3 – add carrot and cook for 4 mins to soften.
4 – Add veg stock , cover and simmer until carrots are cooked.
5 – blitz then add coriander and blitz again
6 – add salt and pepper to taste
