Pete’s super easy sweet & sour pork ( chicken/ fish)

Serves 4


400g Tin of chopped tomatoes- if you prefer a finer sauce use passata
2 tbsp. of vinegar
1 can of Fanta ZERO
1/2 red pepper, chopped
1 onion, chopped
1 carrot, chopped
227g tin of Pineapple, chopped
season with salt & pepper

Chop the onion, pepper, carrot & pineapple as small as possible.

Add ingredients to a saucepan and simmer until thickened and hot. Season with salt & pepper .

Serve on a bed of rice with stir-fry pork or chicken.
I served mine on a bed of cabbage today
