Serves one

1 wholemeal pitta
1 onion chopped
1 chicken or veg stock cube with 60 ml water
1 large potato peeled and chopped
1 health extra allowance of grated cheese

Frylight a pan, add onion and cook until softened
Meanwhile boil potatoes in water and stock
When potatoes soft, mash with a fork, add onion and a little more water if needs. Add cheese.
Should resemble a purée
Toast pitta fora minute to allow to slit easily
Stuff with mixture
Brush with beaten egg and cook for 10 mins or until brown.
