Serves 2

2 pieces of cod loin/ fillet
1 tsp ginger paste, or lazy ginger
1 garlic clove sliced
2 spring onions cut into fine strips
2 tbsp water
2 tbsp soy
1 tsp sweetener
Small handful chopped coriander

Cut a piece of tin foil and a piece of baking paper both the same size , make them big enough to fit the cod in and be able to fold over into a parcel.

Place foil in the oven dish, then the paper on top.
Mix the spring onion, the garlic and the ginger together and place on the bottom of the foil.
Lay the fish on top. Fold the sides of the paper and foil up.
add the water, the soy and the sweetener .
Fold the top of the foil and pinch edges together making a tent .
Cook on gas 6 for 20 mins .

Serve with mange tout, asparagus, new potatoes and corn on a green day
