SCAN BRAN CHOCOLATE & COFFEE CAKE

5 Scan bran (HEXB or 5 Syns)
3 eggs
Sweetener 3 tbsp
1 tbsp cocoa powder (1 Syn)
1 tbsp golden syrup (2.5 Syns)
2 tbsp DE hazelnut coffee (can use any coffee you like)

1. Soak scan bran in boiling water to soften it. Drain and mash.
2. Add all ingredients and mix well
3. Pour into a microwaveable dish and cook for 7 mins on high, or cook, in oven gas 7 for 10 mins
4. Cake should be spongy to touch and should have separated from the sides of dish.

3.5 Syns for whole cake if using scan bran as a HEXB.
I served it with 12.5g (which is quite a lot!) of Anchor light real cream for 1 Syn.
