2 eggs

Small pack of asparagus spears 

2 toast 

2 tbsp grated cheese 

2 slices of ham 

Cook asparagus in salted boiling water for 3 mins 

Put ham on toast and sprinkle with a tbsp of cheese on each slice and melt in microwave for a few seconds . 

Place cooked asparagus on top and top with poached eggs – delicious

SLOW COOKED LAMB

joint of lamb – I used half leg  

2 tbsp mint sauce 

1 cup of red wine 

1 cup of water 

1 tsp dried mint 

1 tsp dried rosemary 

2 tbsp lamb oxo powder 

4 carrots sliced lengthways 

2 parsnips sliced lengthways into 4. 
Mix wine ,water , herbs, mint and oxo then add to slow cooker . Put in the lamb and veggies and cook on high for 6 hours . Bloody gorgeous, easy very tasty and meat fell off bone xx

CREAMY VEGGIE TAGLIATELLE WITH BABYBEL MELT IN THE MIDDLE BURGERS
recipe adapted from original by viv- thank you
serves 3
for the burgers:-
the recipe asked for mince but i used some steak i had in the freezer. i let it defrost a bit then blitzed it in the food processor, that way it stays in mince consistency not a puree.!
so, either a pack of mince or steak minced up.

6 babybel lights ( 2 syns each or 3 for a hea)

2 tsp garlic granules/powder

1 tsp paprika

1/2 tsp chilli powder

2 beef oxos
for the pasta:-

1 onion chopped

1 red pepper chopped

1 courgette sliced

5 mushrooms sliced

tin of tomatoes

2 tsp oregano

2 tsp tomato puree

2 tbsp of garlic herb philly

cook pasta as pack instructions and preheat oven gas 6
mix burger ingredients together and season then shape around the babybels spray with frylight and place on a tray in the oven for 10 mins or until cooked. mine cooked really quickly and were succulent and delicious. 
fry light a pan and add the peppers, onions and courgettes, cook for 2 mins then add mushrooms and tbsp water.
add a tin of tomatoes & the oregano. 
when thats all cooked through, stir in 2 tbsp (30g) of garlic & herb philly, i used tescos brand as philadelphia was out of stock. (1.5 syns)

i used some garlic and chilli freshly ground salt to season 
really delicious

BALSAMIC SAUSAGES

1 pack of sausages, into a dish spray with fry light and sprinkle a tsp of thyme . Cook gas 7 for 15 mins. Add 3 quartered mushrooms, 1/2 sliced onion, and some vine tomatoes. Drizzle over 2 tbsp of balsamic vinegar. Cook until sausages are browned . Serve with mash & veg.

Recipe for bang bang chicken

Serves 4 at 1 syn each 

150g dried rice noodles

2 large skinless boneless cooked chicken breasts 

1/2 cucumber

2 carrots

8 spring onions

Small handful fresh coriander and mint 

Lime slice to serve
Dressing

———-

2cm piece root ginger peeled and grated

1 garlic clove crushed

200ml chicken stock

1/2 tsp cinnamon

1 tsp sweetener

1 level tbsp reduced fat peanut butter 

1 tsp dried chilli flakes

Juice of a lime 
Prepare noodles, drain and rinse

To make dressing -Place garlic ginger, stock & cinnamon into a small saucepan and bring to boil. 

Remove from heat, & cool

Transfer stock mix to a blender add sweetener, peanut butter, chilli flakes, and lime juice and blend

Shred the chicken, cucumber and carrots and mix together in a bowl. Add spring onions and noodles , gently toss 

Drizzle over the dressing and garnish with herbs . 
Very tasty and a real kick!

Turkey and chorizo burgers

Makes 6

300g chicken or turkey mince

6 slices chorizo ( mine worked out 1 syn per slice) 

1tsp oregano 

Salt & pepper 
Place all ingredients in a food processor, blitz and shape into burgers and grill, halogen or oven bake until cooked .

 1 pack of tomatoes, 1 herb stockpot, 1 red onion, 1 crushed garlic, 1 stick celery. 

One of my best yet xx

TURKEY LASAGNE

1 pack turkey mince 1 tsp each- dried tarragon, oregano, sage, 

Lasagne sheets half pack

2 tsp chicken Bovril,

 1 chicken stock cube

, salt pepper 

1 carton passata

Tbsp Tom purée

2 cloves garlic chopped

1 red onion

Mushrooms optional

Cheese 

Milk marg

Plain flour
Soften onion add the mince and brown. Add herbs, Bovril, passata, stock cube, 200ml water. Tom purée, salt n pepper allow to simmer. Meanwhile make the cheese sauce by putting heaped desert spoon of flour, desert spoon of marg and half pint of milk on to simmer . Keep stirring , When it starts to thicken add more milk so you have sauce consistency. Remove from heat and stir in desired amount of grated cheese approx 60g. 

Layer a dish with lasagne sheets, turkey mix and sauce in alternate layers. Bake 20 mins gas 6

SMASH SAUSAGE ROLLS

Mix a pack of mr mash up with a teaspoon salt and 500ml boiling water til it’s like a hard dough. Put a dollop onto sheet of cling film fold film over and roll outuntil thin 

Peel back half film and fill with choice of filling then using film

roll over into sausage roll shape. For fillings I mashed some potatoes then to one batch I added the mash and half a tin of tuna, grated cheese a squidge of Tom puree to another cheese and onion , and the last sausage meat 
Brush with beaten egg and cook gas 7 til browned and crisp.
